"Starward Bourbon Cask #2 is a limited-edition Australian single malt from Melbourne, offering a fascinating glimpse into the path Starward could have taken. Unlike the distillery’s signature use of Australian red wine barrels, this release was fully matured in fresh American oak ex-bourbon barrels for five “Melbourne years.” Bottled at a powerful 52% ABV (104 proof), the bourbon cask provides a relatively neutral canvas, allowing Starward’s naturally tropical, fruit-forward spirit to take centre stage.
The result is a vibrant and approachable high-strength single malt, combining tropical fruit and citrus with vanilla, honey, toasted oak and warming spice. Originally released as a limited edition through a ballot, Bourbon Cask #2 is an appealing bottle for collectors and anyone curious to experience a very different side of Starward.
Tasting Notes
Nose:
Aromatic grilled pineapple and vanilla lead the way, with hints of lemon drizzle, spiced sponge cake, sultanas and buttery oat biscuits.
Palate:
Rich and fruit-forward, with lemon curd, dried banana, succulent honey and tropical orchard fruits. Black pepper and toasted oak add warmth and structure, while the high proof gives the whisky a satisfying intensity.
Finish:
Long and warming, with honeyed sweetness, buttered toast, toasted oak and lingering citrus and spice."
