"Handpicked from a selection of low-yielding plants from each of the 6 Dijon clones. The grapes are cold-soaked for 1 week before fermenting with the indigenous yeasts present on the skins and in the vineyard. After fermenting, the wines stay in contact with the grapes until the desired tannin profile is reached.
The wines are then pressed off into 35% New tight tight-grained French barriques. After one year of ageing in the barrels, the wines are gently fined using egg whites and bottled with no filtration or further fining.
The Iliad Wines show exceptional finesse and character and are destined for ageing."
