The Madeira region in Portugal is well known for the particular heating added in the maturing stage of their wines, and Madeira Vat 22 Island Bottled is not the exception. This became as an accident, with the elevated temperatures during shipping in the 15th and 16th centuries, and currently is done artificially, in a process known as estufagem. The fortification is done using brandy. The grapes are handpicked, analysed, classified, and transported to the winery for vinification. Fermentation is conducted in stainless steel casks at a controlled temperature. Fortification occurs seven days after fermentation. The estufagem is performed by gently heating at 45°C for four months, and then allowing stabilization for two years.
