Commercial Description:
For this series of Inaugural bottlings, we used Concerto malted barley and water from our own borehole. The malt is peated to 50ppm in the kiln. We receive it, crush it and agitate it in our mash tun to create a cloudy wort which delivers a more oily, robust flavour. Our chosen yeast and fermentation time allows us to create the full-bodied flavour we're looking for in our distillation. We then distill twice, at nearly twice the speed of Lochranza, in our handmade copper pot stills.
Batch 3 is matured in Bourbon Barrels for 30 months and transferred into 50 litre Ex-Rioja Red Wine charred casks for 6 months. It was produced using Concerto barley and water from our borehole. We used peat from North East Scotland and the peating level is 50PPM. It is non chill filtered with no additional colouring and is bottled at 50% ABV.
