"The Kilchoman 100% Islay Sherry Cask Matured 11 Year Old is a rich and distinctive limited-edition single malt showcasing Kilchoman's farm-to-bottle philosophy. The whisky is produced entirely on Islay using barley grown and malted at Kilchoman's Rockside Farm, making the 100% Islay range Islay's only Single Farm Single Malt.
Distilled from the 2011, 2012 and 2013 barley harvests, this expression was matured for a minimum of 11 years exclusively in 16 first-fill ex-Oloroso sherry butts from Jerez, Spain. Bottled at a robust 50% ABV, it is presented with no added colour and without chill filtration, allowing the natural character of the whisky to shine through.
The rich influence of the Oloroso casks brings pronounced dark fruit, chocolate and warm spice to Kilchoman's signature lightly peated Islay spirit. With only around 12,000 bottles produced, this is a particularly appealing release for both Kilchoman enthusiasts and collectors.
Tasting Notes
Nose:
Bright orange peel and dried fruits lead into gentle peat smoke, warm sweet spices and rich malt.
Palate:
Full-bodied and richly textured, with dark chocolate, honey, cooked apples and malty sweetness. The Oloroso maturation brings layers of raisins, plums and warming oak spice, balanced by earthy Islay smoke.
Finish:
Long and warming, with grilled fruits, plums and currants followed by lingering wood smoke, gentle oak and a touch of salted caramel."
