What?s the story behind this gin? This is the seventh solera release from our original chardonnay barrel solera. These barrels were originally used for maturing Yarra Valley Chardonnay for six to eight years prior to being filled with Rare Dry Gin. How do you make this gin? These barrels were filled on Christmas Eve 2013 and have never been fully emptied. Previous releases were a blend of portions from each barrel that were then topped up with fresh Rare Dry Gin. This occurred twice per year. Today this solera has grown from two barrels to nine, and this latest release has had a full year in barrel. What does it taste like? The botanical oils have developed and changed dramatically, whilst still remaining distinctively gin. The juniper base has become resin-y in texture, while the spices show developed intensity and fragrance. As with previous releases the preserved ginger character (thanks to the cardamom) is amazing and sits nicely with crushed coriander and preserved citrus notes. The oak continues to contribute to colour and sweetness, weight and texture. 

Why the change to 500mL format? Only our Barrel Aged gins have moved to a 500mL format. The rest of our gins will remain in 700mL. The reason is that we tend to find that people drink through their barrel aged gins a bit slower, as it?s a sipping product. Plus, our solera system is limited ? we only have a certain number of barrels in which to produce the gin - so there is a limit on how much we can release each year. The 500mL format means that same amount of gin can stretch a little further, into more bars (and home bars) around Australia and the world. How do I drink it? This is a balanced, super sippable drink. Enjoy it neat or on the rocks - it?s delicious over one large ice cube with a drop of honey and a small sprig of rosemary.
