Dom La Croix Salain Macon Villages 2021

$32.99
Origin and grape variety
This elegant white wood-aged wine, made from 100% Chardonnay grapes, comes from Mâconnais, the southernmost region of Burgundy in France.
Winery, vineyard and winemaking
The house 'Domaine de la Croix' was founded by a number of winegrowers from Lugny north of Macon who want to produce wine in a sustainable way. The winery may carry the label 'Vignerons Développement Durable' and it is expected that it will soon be fully organic certified. The 'Sur la Roche' cuvée is made from grapes from a specific part of the vineyard where the soil contains clay and limestone and the vines face south so that the grapes receive a lot of sun. No chemical pesticides are used and crops are planted that attract natural enemies of bacteria that can harm the vines. No sulphite is used from harvest to the last stage of the fermentation process (in temperature-regulated stainless steel tanks). Only at the very last moment is a little sulphite added to prevent oxidation. The wine rests on the skins ('sur lie') during fermentation until bottling, making the aromas more expressive and complex.
Character of the wine
The wine is light gold in color with a green hue. The aromas on the nose are intense and tend towards ripe and exotic fruits such as peach, plum and pineapple. The mouthfeel is soft and the ripe fruit aromas of the scent are reflected in the taste. Citrus notes in the aftertaste emphasize the fresh character of the wine.
Wine & food
The wine is perfectly suitable as an aperitif, especially when served with puff pastry snacks. It also goes well with dishes with white meat, fish and vegetables and with goat cheese.
The winery gives an extra wine & food combination tip: “'Sur la Roche' wine is delicious with asparagus with a Hollandaise sauce with cream”.
Alc: 13%
