After monitoring the maturation and harvest, we gently destem and then vat in stainless steel winemakers, where we control the temperature below 28?C. Once the desired color and structure has been achieved, we carry out the vatting in concrete tanks, where malolactic fermentation and subsequent maturation process take place for 2-3 months.
