"Pahi Vineyard, situated on Te Muna Road, is a combination of clones 114, 115, Pommard, 667, and Abel, giving a diverse array of flavours and Pinot noir expression.
Part of the Martinborough Terrace, the site possesses the same alluvial, free-draining gravel soils that have made Martinborough famous. Planted in 2003, these vines are of adequate age and are considered by Escarpment to produce superior-quality fruit. Grown organically since 2020 and transitioning to Biogro status, an exemplary single vineyard expression is assured.
The fruit was open-top fermented with indigenous yeast in traditional cuvees, hand-plunged every 12 hours, with a total vat time of 18 days. After pressing, it was matured in 40% new French oak barriques for 18 months. Bottled without fining or filtration, promoting a soft mouth feel and texture. This is an outstanding example of classic Pinot noir. It will continue to develop for up to 10 years and will always be a wonderful complement to any game meat."
