"Origin of the name "DASSAI"
"Dassai” literally means "otter festival". This is a word that was used long ago in our region, Yamaguchi Prefecture, as there were many otters frolicking in the nearby rivers.
To craft the ultimate Junmai-Daiginjo sake, we polished down Yamada-Nishiki rice to 23%. Delivering delicate floral aromas with a palate reminiscent of honey and an elegant lasting finish.
