"Caol IIa, is a lively whisky, peaty and full in flavour, without being as intense as its more famous counterparts. Its availability is limited, and with a name that is difficult to pronounce, Caol Ila has remained an almost secret Islay malt. The name - pronounced 'culleela' is gaelic for 'Sound of Islay'. The distillery is appropriately hidden in a cove near Port Askaig, overlooking the Sound of Islay, across which the ferry chugs to the nearby island of Jura.

TASTING NOTE
AROMA WITHOUT WATER
Sweet cured meat aromas, with hints of green apple, pineapple and vanilla. Underlying hints of menthol and peat smoke develop.
TASTE WITHOUT WATER
The palate is sweet with cracked black pepper initially. Lemon, lime and ripe banana flavours combine with a lingering hint of bonfire embers.
AROMA WITH WATER
Hints of beeswax polish and vanilla initially. Menthol, lemon and lime aromas develop and compliment a subtle peat smoke note.
TASTE WITH WATER
Chilli spice with ripe fruit flavours, banana and pear. Becomes creamy with hints of milk chocolate and delicate peat smoke edge."
