Four Pillars Sherry Cask Gin 500ml
What’s the story behind this gin? Our sherry cask solera is made up of 42 ex-sherry barrels, stacked three rows high in a stillage arrangement behind Wilma and Jude. They’re much older than our chardonnay barrels, varying in age from 15 to 35 years old. How do you make this gin? These barrels were filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels. The barrels are never emptied - a small portion from each barrel is taken out, which is then replenished from the row above. Fresh gin is only ever put into the top row of barrels creating a traditional solera system. What does it taste like? Slightly deeper in colour than the Chardonnay gin, this is a rich, intense and layered barrel aged gin. Once again, the botanical oils have developed and changed in barrel. The juniper/pine oil character underpins some amazing complexity. The residual sherry character has integrated beautifully with the deeper cassia and star anise flavours. Think dried fruits and nuts. The addition of a tiny bit of Spanish Amontillado sherry has added some length and sweetness to the final gin. Why the change to 500mL format? Only our Barrel Aged gins have moved to a 500mL format because find that people drink through their barrel aged gins a bit slower, as it’s a sipping product. Plus, our solera system is limited – we only have a certain number of barrels – so there is a limit on how much we can release each year. The 500mL format means that same amount of gin can stretch a little further, into more bars (and home bars) around Australia and the world. How do I drink it? Sip it neat over ice, or try it in a Tuxedo, a classic cocktail made with gin, Sherry and orange bitters.
